Vegetables are parts of plants that are consumed by humans or other animals as food. The original meaning is still commonly used and is applied to plants collectively to refer to all edible plant matter, including the flowers, fruits, stems, leaves, roots, and seeds. Some of the major fruits and vegetables produced are tomatoes, potatoes, beets, oranges, onions, grapes, and dates among others. Potatoes and tomatoes together make up around 24% of the gross fruits and vegetable production in Egypt, while beets, oranges, onions, grapes, and dates all contribute about 44%.

Lettuce

Lettuce is an annual plant of the daisy family, Asteraceae. It is most often grown as a leaf vegetable, but sometimes for its stem and seeds. Lettuce is most often used for salads, although it is also seen in other kinds of food, such as soups, sandwiches and wraps  it can also be grilled.

 

Peppers

Broccoli

Broccoli is an edible green plant in the cabbage family whose large flowering head and stalk is eaten as a vegetable. The word broccoli comes from the Italian plural of broccolo, which means “the flowering crest of a cabbage”, and is the diminutive form of brocco, meaning “small nail” or “sprout”. Also known as calabrese (it is originally from the Calabria region of Italy) broccoli with its tiny bright green buds, is one of the most popular vegetables in the UK. Along with cauliflower and cabbage it is a member of the brassica family. Look for bright green flower heads with firm stalks; avoid yellowing heads or wilting stalks.

 

Lettuce “Iceberg”

Egyptian Iceberg lettuce is one of the main constituents in salads and is known for its crunchy texture. It has comparatively less nutrients than the other greens that you may find in salads.

It’s also an excellent source of potassium and manganese, as well as a very good source of iron, calcium, magnesium, and phosphorous. It also contains traces of sodium, copper, and  zinc

Iceberg lettuce is an excellent source of vitamin A, vitamin K, and vitamin C. It is also a good source of thiamin, vitamin B6, and folate (vitamin B9)..

Iceberg lettuce is so deliciously crunchy due to its high water content. In case the lettuce leaves are beginning to wilt, place them into a large bowl of ice cold water and let them sit for a 10 minutes. Once refreshed, remove them from the water, shake off all the excess water and place into an airtight container lined with kitchen towel. Like this your lettuce will last much longer and remain crisp.

Tomatoes

Tomato, (Solanum lycopersicum), flowering plant of the nightshade family (Solanaceae), cultivated extensively for its edible fruits. Labelled as a vegetable for nutritional purposes, tomatoes are a good source of vitamin C and the phytochemical lycopene. The fruits are commonly eaten raw in salads, served as a cooked vegetable, used as an ingredient of various prepared dishes, and pickled. Additionally, a large percentage of the world’s tomato crop is used for processing; products include canned tomatoes, tomato juice, ketchup, puree, paste, and “sun-dried” tomatoes or dehydrated pulp.

 

Types of Tomato

Beef Tomatoes
The largest of the tomato varieties, these have a sweet dense red flesh. Ideal for stuffing, slicing or cooking with.

Vine Ripened Tomatoes
These are packed with flavour and mature further and keep better on the vine.

Cherry Tomatoes
These are much smaller than other tomato varieties and have a very intense sweet flavour. Delicious as a lunchbox snack, in salads or roasted.

Cherry Tomatoes on the Vine
The small cherry tomato with a more intense flavour and aroma.

Sungold Tomatoes
A much more delicate flavour than the traditional cherry, very juicy and a lovely orange colour which looks great in salads or as a garnish.

Baby Plum Tomatoes
The most intensely sweet flavour and juicy flesh, with an elongated shape and deep colour. Ideal for salads or cooking they also make a great snack.

Midi Plum Tomatoes
Smallish plum tomatoes which have a sweet-sour flavour, they have a distinctive oval shape and have a very high flesh/seed ratio which makes them great for most cooking methods.

Plum tomatoes
These egg-shaped tomatoes have a meaty flesh and concentrated flavour, which makes them especially well-suited to cooking. Plum tomatoes are the most popular variety for canning.

Golden Onions

Golden onions are the most popular cooking onions because they add excellent flavor to most stews, soups, and meat dishes.
Golden onions have a yellow-brown papery skin on the outside and a white flesh.  When it’s being prepared, the yellow onion may not appear to be the most appetizing vegetable. Still, it’s eaten regularly thanks to its delicious taste that adds a kick to any meal.


Garlic

Egyptian garlic is smaller in size than common white garlic and has a globular, tear-drop bulb that connects into a stem, also known as a neck, that may appear green when fresh and brown when dried. The outside of the bulb is covered in thin, white papery coatings that are flaky, dry, and brittle. When peeled away, there is another layer known as the clove skin that ranges in color from white to tan and is tightly adhered to the clove. Egyptian garlic contains many cloves and can develop up to twenty-five cloves in one bulb. The cloves are clustered together, forming multiple layers of slender and slightly flattened shapes, and the outer cloves are typically larger in size than the inner cloves. When raw, Egyptian garlic has a crisp texture with a sharp, pungent, and spicy flavor, and if crushed, it will emit a strong aroma. This flavor and aroma will lessen with cooking and will develop a mild, savory flavor.

Potatoes

Potatoes are edible tubers, available worldwide and all year long. They are relatively cheap to grow, rich in nutrients, and they can make a delicious treat.

Carrots

The carrot is a root vegetable, usually orange in colour, though purple, black, red, white, and yellow cultivars exist. They are a domesticated form of the wild carrot, Daucus carota, native to Europe and Southwestern Asia. The plant probably originated in Persia and was originally cultivated for its leaves and seeds. Aubergine

Eggplant, aubergine or brinjal is a plant species in the nightshade family Solanaceae. Solanum melongena is grown worldwide for its edible fruit. Zucchini

The zucchini or courgette is a summer squash, of Mesoamerican origin, which can reach nearly 1 m in length, but is usually harvested when still immature at about 15 to 25 cm. A zucchini is a thin-skinned cultivar of what in Britain and Ireland is referred to as a marrow
